This Swiss raclette cheese Raccard is imported from Switzerland by Mifroma. The half wheel is about 6 lbs. The Raccard is still manufactured in accordance with the original recipe. Produced from creamy cow’s milk, Raccard's incomparable flavor is due to the rich flora of the lush, Swiss countryside and makes a full-bodied savory cheese.
It's taste and texture is similar to the Emmi Raclette, very clean and smooth.
Vacuum sealed, it has a shelf live of 4 month. Made in Switzerland.

We received our 7lbs Mifroma raclette cheese just in time for our raclette dinner with a large group of friends in Alaska. The cheese arrived nice and chilled with zero shipping issues (which, for Alaska standards, is a small miracle). It tasted just as it does when I buy it at home in Switzerland and our friends could not stop raving about the amazing cheese tastes and quality. For anyone wanting to purchase quality raclette or fondue cheese, I cannot recommend raclettecorner products enough! No rind?
Flavor was good. Creamier, milder and less fatty than those from artisanal cheesemakers, but surprisingly better than what I would expect from Mifroma. I supposed it could depend on the batch, but I don't agree with other negative reviewers that say this brand is completely bland. The main reason for only 3 stars is that the product description really needs to warn buyers that there is no rind. I made the mistake of only opening this package an hour before serving, and to my complete horror, discovered that there was no rind. I honestly had no idea what I was looking at, and if it was a manufacturer's defect or some other anomaly. I have never, ever heard of any Swiss cheese, raclette or otherwise, without rind and only shaped by the plastic bag within which it is contained. If this is modern cheese-making then I certainly wouldn't call it progress. The whole point of getting a half wheel is to use my half-wheel, cradle-arm raclette oven, and without a rind to contain the melting cheese and prevent the whole thing from turning into a puddle of goo, I couldn't use it as intended. Thankfully, I hadn't yet thrown my defective Stöckli raclette grill away, but it was definitely less than ideal since it was a small 4-serving grill for 6 people which wasn't melting the cheese quickly enough. I immediately took advantage of the Spring Sale to get a new raclette grill in the event I can't get a "real" half-wheel in the future. In summary, good cheese, but it would have been nice to have the full details before buying. My recommendation is still "yes" if you have a raclette grill with the little melting dishes, but "no" if you have an "old school" melter designed for a half wheel.
Shipping
We like the Cheese, but it was sent to Texas, hot climate, with just 1 cooling bag. Shipping took 3 days. The cheese was extremely soft when it was unpacked. Needs to be packed much better with more ice or dry ice.

Raclette is delicious
We love melting Raclette cheese in our 6-inch cast iron skillets and then drizzling it over sandwich fillings (crisp prosciutto and cornichon pickles, for example). Best sandwiches ever.
