Left over raclette cheese? How about Alfredo Sauce?
Posted by Sonja Hoffmann on
It's rare, but it does happen! Left over raclette cheese. In this particular instance I had some of the smoked raclette cheese left. I also had some sliced chicken breast from our raclette meal the night before and some broccoli. I decided to make Chicken Alfredo with broccoli and raclette cheese.
Here a quick recipe:
2 tbs real butter
1 cup heavy cream
6 oz of shredded raclette cheese
1 minced clove of garlic
Italian seasoning, paprika, fresh pepper,
1 chicken breast, thinly sliced (optional)
broccoli florest (optional)
1 lb noodles
In a saucepan, melt the butter at medium heat, add the chicken until brown. Take out the chicken and set aside. Add garlic to the saucepan, make sure it doesn't roast, than cream and seasoning. Add the shredded cheese and stir until melted. In the meantime cook the broccoli (I use the microwave) and noodles of your choice.
Pour over your noodles, chicken, and broccoli. Add some shredded cheese for decoration. The smokey flavor of the raclette cheese added a surprising note to this classic dish and the family loved it!
