Raclette Cheese does not increase your cholesterol level!

A study conducted at the University College Dublin, Ireland, found that people that eat a lot of cheese do not have higher cholesterol levels than those who don’t. In addition, people that eat low-fat dairy products showed a higher cholesterol level that those who stick with the natural fat content in dairy products. The study also found that high dairy intake correlates to a lower Body Mass index! So the more dairy you eat the slimmer you are?

Raclette Cheese is Lactose Free!

Many cheeses do not contain any lactose. Raclette is one of them. Lactose is a natural sugar found in milk. During the raclette cheese making process, the lactose is removed when the whey is pressed out of the curds. The little lactose that’s left breaks down over time while the cheese is aging. For raclette that means about 10-12 weeks. If in doubt, read the nutrition label of the cheese. When it reads 0g sugar there is no lactose left.

Raclette Cheese is Gluten Free!

Most cheeses are naturally gluten-free except for those that are washed with beer (not raclette) or blue cheeses. BUT: People that have celiac disease still need to look for the gluten free label. Not all cheese producers can guarantee that the cheese has not been cross contaminated during the process or later when cut and packaged.
