During the raclette cheese making process, the lactose is removed when the whey is pressed out of the curds. The little lactose that’s left breaks down over time while the cheese is aging. For raclette that means about 10-12 weeks. If in doubt, read the nutrition label of the cheese. When it reads 0g sugar there is no lactose left.

Most cheeses are naturally gluten-free except for those that are washed with beer (not raclette) or blue cheeses. BUT: People that have celiac disease still need to look for the gluten free label.
